Mini Puff Pastry Tartlets

Ingredients:
1) Puff Pastry - 3 lb (1.3 kg).
2) Yellow bell pepper - 1 large piece, seeded and cut into thin strips.
3) Parmesan cheese - 3 oz (75 g), grated.
4) Tomatoes - 4, sliced.
5) Goats' cheese - 6 oz (175 g), crumbled.
1) Prosciutto - 6 thin slices, halved.
2) Mozzarella cheeses - 2, (10 oz .
3) Chopped fresh herbs (parsley, chives, basil).

Also needed:
Several baking sheets, a kitchen knife.

Mini Puff Pastry Tartlets
Instructions:
1) Using kitchen knife, slice the pastry equally into 6 pieces.

2) Spread out each piece of pastry into rectangular shapes (dimensions 9" X 6").

3) Slice each rectangular pastry further into six 3" square strips to get 36 pastry squares in all.

4) Preheat the oven to 425 degree Fahrenheit (or 220 degree Centigrade).

5) Moisten the baking sheets.

6) Place the pastry squares over the baking sheets, keeping them an inch and a half apart.

7) Garnish 12 of the pastry squares with the pepper slices and Parmesan.

8) Top another 12 with the tomato slices and goats' cheese.

9) Use the prosciutto and mozzarella as the topping of the final 12 pastry squares.

10) Bake the pastries in the oven for about 10-15 mins, or until puffed and golden brown.

11) Sprinkle the chopped fresh herbs on top of the mini tartlets for garnish.

12) Serve the tartlets warm.
