Kaju Katli Recipe

Kaju Katli Recipe for Diwali

Recipe Servings: 3
Prep Time: 5 minutes
Cook Time: 35 Minutes

Ingredients :
  • 1 tsp saffron
  • 100 gm cashew nuts, broken
  • 6 Tbsp sugar
  • 1/2 tsp green cardamom powder
  • 2 sheets silver varq
Preparation :
  • Grind cashew nuts into a fine powder.
  • Heat sufficient water in a non-stick pan.
  • Add sugar and saffron, mix and cook till syrup thickens.
  • Add cardamom powder and cashew nut powder and mix well.
  • Cook for about 3 minutes.
  • Spread the mixture onto a thali and let it cool to room temperature.
  • Transfer mixture onto a worktop and knead a little.
  • Spread the mixture into aburfitray, garnish with silvervarqand let it set.
  • Cut into squares and serve.

Rava Kheer Recipe

Recipe Servings: 4
Prep Time: 05 Minutes
Cook Time: 35 Minutes

Ingredients :
  • 1 kg full cream milk
  • 1/4 cup rava (semolina)
  • 1/2 cup sugar
  • Dry fruits
  • A pinch of saffron
  • 2-3 green cardamoms
Preparation :
  • Roast rava till slightly covered.
  • Add milk and bring to a boil.
  • Lower the heat and simmer.
  • Keep stirring to avoid scorching.
  • Add sugar followed by dry fruits, saffron and cardamom.
  • Cook for another 5 minutes.
  • Ready to serve.

Badam Halwa and Barfis Recipe

Badam Halwa and Barfis Recipe

Cook Time: 30 Minutes

Ingredients :
  • 125 gm soaked, blanched and ground almonds
  • 75 gm poppy seeds soaked in milk
  • 1 liter milk
  • 125 gm khoya
  • 200 gm sugar
  • 200 gm ghee
  • 1/4 tsp saffron strands
  • 4 green cardamoms
Preparation :
  • Strain and grind the poppy seeds.
  • Combine with almonds, cardamom and milk, blend until smooth.
  • Cook on a slow flame.
  • Once the mixture thickens add khoya, sugar and saffron.
  • Thicken the mixture further.
  • Add the ghee and continue cooking until the mixture leaves the sides of the pan.
  • Serve hot as halwa.
To make Barfi:
  • Set in a lightly oiled tray.
  • Cut into desired shape and decorate with silver leaf.

Mohanthal Recipe

Mohanthal Recipe for Diwali

Recipe Servings: 4
Prep Time: 10-15 Minutes
Cook Time: 30 Minutes

Ingredients :
  • 250 gm gram flour (besan)
  • 1 Tbsp ghee
  • 3 Tbsp milk, mixed to a crumbly consistency
  • 50 gm khoya
  • 200 gm sugar
  • 1/2 tsp cardamom powder
  • 150 gm ghee
For garnishing:
  • Almonds
  • Pistachios
Preparation :
  • Put sugar and half a cup of water over low heat and stir till sugar dissolves (do not let it come to a boil).
  • When it dissolves let it boil and cook till hard ball consistency.
  • Drop a drop into cold water and it should form into a hard lump.
  • While sugar is cooking, cook khoya over low heat, stirring all the time, till crumbly.
  • Heat ghee and add the gram flour mixture and saute till a light brown.
  • Add cardamom, mix well and remove from heat.
  • Add syrup and stir gently to mix well.
  • Transfer to greased thali, pat to level, garnish with almonds and pistachios.
  • Cool and cut into squares and store into air tight containers.

Coconut Til Laddoo Recipe

Coconut Til Laddoo

Recipe Servings: 4
Prep Time: 05 Minutes
Cook Time: 25 Minutes

Ingredients :
  • 2 cups white sesame seeds
  • 1 and 1/2 cup chopped dates
  • 1 cup dry grated coconut
  • How to Make Coconut Til Ladoo (Laddu)
  • Finely chop de-seeded dates.
Preparation :
  • Dry roast sesame in a wok for around 1-2 minutes on medium flame until it light golden.
  • Keep aside the sesame to cool.
  • Add coconut to the wok.
  • Stir well.
  • Lightly grind the cooled sesame in a dry grinder more for a few seconds.
  • Make sure you don't grind it to fine.
  • Take the ground sesame seeds in a bowl.
  • Add chopped dates and coconut powder and mix well.
  • Take small amount of mixture and roll it in hand to form a ball orladoo.
  • You can roll the laddoo in some coconut powder to add texture.

Badami Besan Ke Laddoo Recipe

Badami Besan Ke Laddoo

Prep Time : 16-20 minutes
Cook time : 16-20 minutes
Serve : 4

Ingredients :
  • Almonds 20-25
  • Gram Flour 4 cups
  • Ghee 2 cups
  • Green cardamom powder 1/2 teaspoon
  • Powdered sugar 2 cups
Preparation :
  • Heat ghee in a kadai and add green cardamom powder.
  • Add gram flour and roast on low heat till a nice aroma is given out - for approximately ten minutes.
  • Crush almonds.
  • Transfer roasted gram flour to a bowl and add crushed almonds and mix.
  • Allow the mixture to cool slightly before adding powdered sugar.
  • Add sugar and mix.
  • Roll into even sized laddoos. Cool and store.
