Baked Eggs with Cheddar and Potatoes
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Ingredients:
- Butter - 3 tsp, unsalted.
- Potatoes - 1 1/2 pounds, red-skinned, diced.
- Flat-leaf parsley leaves - 1/4 cup, chopped fresh.
- Garlic - 2 large, minced.
- Cloves - 2 large, minced.
- Kosher salt - 1 tsp.
- Black pepper (for taste) - Freshly ground.
- Eggs - 8, large.
- Farmhouse cheddar - 1 cup, extra-sharp and shredded (about 4 ounces).
Instructions:
- Preheat the oven to 400 degrees F.
- Melt the butter in a large cast iron frying pan over medium heat. Add the
potatoes and cook, stirring occasionally, for about 15 minutes, or until tender
and brown. Stir in the parsley, garlic, salt, and pepper. Remove pan from heat
and keep to one side.
- Make 4 evenly spaced shallow nests and break 2 eggs into each. Bake until the
egg whites are cooked and the yolks are still runny. Bake for about 10 minutes.
Sprinkle the cheese over the eggs. Continue baking for a minute more or until it
just melts. Serve right away.
Yield: 4 servings.

Chicken Sausage Patties
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Ingredients:
- Butter - 1 tsp.
- Apple - 1 green, finely chopped.
- Onion - 1 small, finely chopped.
- Sweet paprika - 1 teaspoon.
- Fennel seed - 1 teaspoon.
- Chicken breast - 1 1/2 pounds, grounded.
- Poultry seasoning - 1 1/2 tsps.
- Allspice - 1 teaspoon.
- Salt and pepper.
- Extra-virgin olive oil (for drizzling).
Instructions:
- Preheat a small nonstick frying pan over medium heat. Melt butter in it and
add apples and onions. Season with a little salt, pepper and fennel seeds. Saute
the mixture gently for 5 minutes to soften. Remove from heat to cool.
- Place chicken in a bowl. Season with salt, pepper, poultry seasoning,
allspice, paprika and a generous drizzle of extra-virgin olive oil. Add in the
apples, onions and fennel. Mix the sausage. Score meat into 4 sections and form
from each section 3 small, thin patties (Dimensions: 2 1/2 inches across, 12
small patties total).
- Preheat a griddle pan over medium-high heat. Now cook the patties for 3 to 4
minutes on each side. Serve warm.
Yield: 12 patties, up to 6 servings.

Spring Green Salad
Preparation Time: 10 minutes
Ingredients:
- Mixed green vegetables (mesclun, mache, watercress, baby arugula, dandelion;
including hydroponic lettuces, sprouts and shoots - pea shoots) - 8 to 10 cups
(about 1 pound).
- Chives - 2 tsps, finely chopped.
- Kosher salt.
- Black pepper (freshly ground).
- Extra-virgin olive oil - 2 to 3 tsps.
- Lemon - 1/2, juiced.
Instructions:
- Wash and dry the green vegetables; place in a large bowl.
- Add chives and season with salt and pepper. Drizzle over about 2 tsps of the
extra-virgin olive oil. Toss well to coat.
- Squeeze lemon juice over the greens and toss again. Taste and adjust
seasoning as per your wish. Serve right away.
Yield: 4 to 6 servings.
