Nariyel Laddu | Til Pitha | Ghila Pitha | Brinjal Khar | Fish Pitika | Melon Beej

1. Nariyel Laddu

Ingredients:
Dry and shredded coconut- approximately 3 cups.
Milk- 1 cup.
Sugar- 2 cups.

Procedure:

  • Use a pan to boil the milk.
  • While you are boiling the milk, add 2 cups of shredded coconut and stir it well.
  • Sugar should only be added after the milk is absorbed.
  • Stir it well on a medium temperature until the sides of the pan are cleared.
  • After you are done, remove the mixture and make small balls.
  • Put these balls in the shredded coconut to make laddus.
  • You are now ready to serve it.

2. Til Pitha

Ingredients:
Sticky Rice- 2 cups
Jaggery- 100 grams.
Black Sesame seeds- 80 grams
Water- 4 cups

Procedure:

  • Soak the rice in water for few hours.
  • Crush it after draining the excess water.
  • Bake sesame seeds and you have to remove its outer shell by beating it.
  • Jaggery should be cut into small pieces.
  • Blend Jaggery with the black sesame seeds.
  • Heat the griddle and spread the rice batter over the griddle and give it a shape of your choice.
  • Put the stuffing of Jaggery and sesame on the griddle while heating it.
  • When the rice batter is firm, start rolling it to cover the stuffing.
  • Heat the griddle in low temperature for some time before taking it off. Jaggery should not be melted.
  • Serve it.

3. Ghila Pitha

Ingredients:
Rice Flour- 1 kg.
Shredded Jaggery- ½ kg.
Cooking oil- 200 grams.
Warm water- 1 cup.

Procedure:

  • Put the Jaggery in a cup of warm water and stir it properly.
  • Wait for some time.
  • Crinkle the rice flour in the jiggery water.
  • Squeeze the mixture properly until the dough is smooth and soft.
  • Keep it aside for 10 minutes with a lid.
  • Make small balls from the dough.
  • Make half inch thick rounds by squashing them.
  • Fry them in a medium flame until these are brown.
  • You are now ready with the item.

4. Brinjal Khar

Ingredients:
Small Eggplants- 2
Garlic Cloves- 3
Khar
Pieces of fish
Crashed onion- 1
Oil
Salt

Procedure:

  • Chop the brinjal into small pieces.
  • Wash the pieces of fish and make them dirt free.
  • Heat oil in a pan and fry garlic and onions until they are red.
  • Put the pieces of fish in the pan.
  • Add salt according to taste.
  • Wait for few minutes before adding chopped brinjals and cook the mixture.
  • At last add khar and cook.
  • Serve it hot along with rice.

5. Fish Pitika

Ingredients:
Fish -500 grams
Mustard paste- 2 tablespoon.
Garlic pieces- 2 to 8.
Lemon Juice- 2 tablespoon.
Crashed green Chilies- 2
Mustard oil- 2 tablespoon
Banana leaf- washed and brushed with slight oil.

Procedures:

  • Unpeel the garlic before crushing it.
  • Wrap the fish properly in a banana leaf and heat it until cooked.
  • Separate the bones and skin of the fish.
  • Crash the fish and add soil and mix it.
  • Heat oil in a pan.
  • Again add garlic and mustard paste in the oil.
  • Fry the mixture for one minute on a low flame.
  • Now the mixture has to be mixed with the mashed fish.
  • Now add the lemon and green chilies with it.
  • The item is ready to serve.

6. Melon Beej (seed)

Ingredients:
Musk Melon seeds of 75 grams Melon.
Grounded Sugar- 30 grams.
Water- 1 cup.
Ghee- 1 tablespoon.
Procedures:

  • Dry the seeds of musk melon after cleaning them.
  • Heat ghee in a saucepan and put seeds in it.
  • Heat it for 2/3 minutes until they are brown.
  • Put grounded sugar in the saucepan and let the musk melon seeds stick at each other.
  • Mix it appropriately.
  • It is ready to be served.
